In comparison to yellow raisins, black raisins have a more natural flavor since they are dried without the use of sulfur dioxide. Drying black raisins in the sun for many weeks on paper trays is the method used to produce them. To speed up the drying process, they are placed on wooden trays and blasted with heated air.
